Spicy Tuna Cucumber Bites

These easy cucumber bites are the kind of appetizer that feels a little fancy but takes no time at all.

Cool, crisp cucumber rounds are topped with a creamy, spicy tuna mix and garnished with green onion and sesame seeds for a light, low-carb snack or starter.

Spicy Tuna Cucumber Bites

Ingredients:

  • 1 (8 oz.) can water-packed tuna, drained
  • ¼ cup mayonnaise
  • 1 tablespoon sriracha sauce, For more heat, adjust to taste.
  • ½ teaspoon garlic powder
  • Sea salt and black pepper, to taste
  • 1 large English cucumber, sliced
  • 2 large green onions (green parts only), sliced
  • 2 tablespoons white sesame seeds

Directions:

  1. In a medium bowl, combine the drained tuna, mayonnaise, sriracha, and garlic powder. Season with salt and pepper and stir to combine until smooth and creamy.
  2. Spoon the tuna mixture onto each cucumber slice and place on a serving platter.
  3. Just before serving, garnish with sliced green onion and a sprinkle of sesame seeds.

Tips & Swaps

  • No tuna? Try canned salmon or even shredded rotisserie chicken.
  • Spice it up or down: Mix in extra sriracha for more heat or add more mayo to mellow it out.
  • Crunch factor: Tuck a slice of radish or avocado under the tuna for added texture.
  • Make ahead: You can make the tuna mixture up to 2 days in advance and store it covered in the fridge. Assemble just before serving for best results.
  • Dairy-free? Swap in avocado mayo or another plant-based option.
