One Pan Breakfast Sandwiches

Easy one-pan breakfast sandwiches made in a muffin tin using canned biscuits, baked eggs, sausage, and cheese. Perfect for meal prep, busy mornings, and freezer breakfasts.

Ingredients
  

  • 1 can Flaky Jumbo Biscuits
  • 6 eggs
  • Splash of milk optional, for fluffier eggs
  • 6 fully cooked sausage patties
  • Cheese slices cut into quarters
  • Cooking spray

Method
 

  1. Preheat the oven to 350°F. Spray a muffin pan with cooking spray.
  2. Bake the eggs:
  3. Crack one egg into each muffin cup.
  4. Add a drop of milk to any cup where you want a fluffier baked egg.
  5. Bake for 10–12 minutes, or until the eggs are set.
  6. Remove eggs from muffin tin and set aside.
Prep the biscuits:
  1. Spray the muffin tin again.
  2. Split each biscuit in half to create a top and bottom.
  3. Assemble the sandwiches:
For each muffin cup:
  1. Place the bottom half of the biscuit into the cup.
  2. Add one baked egg.
  3. Add one sausage patty.
  4. Top with a quarter slice of cheese.
  5. Cover with the top half of the biscuit.
Bake:
  1. Return to the oven and bake for 10 minutes, or until the biscuits are risen and golden.
Serve:
  1. Let cool slightly, then pop out and enjoy warm!

Notes

Storage & Reheating

  • Refrigerate: up to 3 days in an airtight container.
  • Freeze: wrap each sandwich in foil or plastic wrap + store in a freezer bag (up to 2 months).
  • Reheat:
  • Microwave: 45–60 seconds
  • Air fryer: 3–4 minutes at 325°F
