Sparkling Paloma Cocktail

Ingredients
  

  • Himalayan rock salt fine (for rim)
  • 1 large lime cut into wedges
  • Ice
  • 6 oz. fresh pink grapefruit juice about 1 large grapefruit
  • 3 oz. blanco tequila
  • 1 T. fresh lime juice
  • Club soda to top
  • Garnish: lime wheels and/or twisted grapefruit peel
  • Optional: 1-2 t. monkfruit simple syrup or agave per glass to sweeten

Method
 

  1. Pour fine Himalayan salt onto a shallow dish. Wipe rim of each glass with a lime wedge, then press and rotate firmly into the salt to coat the rim.
  2. Fill each glass with ice.
  3. Divide grapefruit juice, tequila, and lime juice evenly between the two glasses. Stir briefly to combine.
  4. Top each glass with club soda. Add sweetener if desired and stir gently.
  5. Garnish with a lime wheel and/or twisted grapefruit peel. Serve immediately.
