Chipotle Corn Salsa Copycat

This Chipotle corn salsa copycat is bright, smoky, and better than the original. Roasted corn, poblano pepper, red onion, cilantro, and fresh citrus juice. Ready in 10 minutes.
Prep Time 5 minutes
Cook Time 5 minutes
Servings: 6

Ingredients

  • 1 medium poblano pepper diced
  • 20 oz. corn fresh, frozen, or canned — drained
  • ½ cup red onion finely diced
  • ½ jalapeño finely diced
  • ½ cup fresh cilantro chopped
  • 3 tablespoons fresh lime juice
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon salt
  • Tortilla chips to serve

Method

  1. Preheat oven to broil.
  2. In a mixing bowl, combine corn, poblano pepper, red onion, jalapeño, cilantro, lime juice, lemon juice, and salt. Stir to combine.
  3. Transfer to an oven safe dish.
  4. Broil for 3-5 minutes until the corn gets a little char and the peppers soften slightly.
  5. Remove from oven and serve warm or at room temperature with tortilla chips.

Tips & Variations

  • Fresh corn is best in summer — frozen corn works perfectly year round and is what most people use
  • Control the heat — leave the jalapeño seeds in for more heat, remove them for mild heat. Skip it entirely if you’re heat sensitive
  • Char the poblano first — for extra smoky flavor, char the poblano directly over a gas flame or under the broiler before dicing and adding to the mix
  • Serve warm or cold — this salsa straight from the oven is great, but this is equally delicious at room temperature or cold from the fridge the next day
  • Skip the broil — if you’re in a hurry, this is honestly delicious without broiling too. Just mix and serve
  • Use it on everything — tacos, burrito bowls, grilled chicken, fish, eggs, or straight with chips

  • Does not freeze well

Frequently Asked Questions

Can I use canned corn? Yes, just drain it well before using. Frozen corn is actually the best everyday option and what most people use for this recipe.

Is this spicy? It’s mildly spicy. The poblano is quite mild and the jalapeño adds just a little heat. Remove the jalapeño seeds or skip it entirely for a completely mild version.

Can I make this ahead? Yes! Make it up to 24 hours ahead and store covered in the fridge. The flavors actually improve as they sit.

Why This Recipe Works

Broiling the corn mixture for just a few minutes adds a subtle char that mimics the roasted flavor Chipotle is known for. The combination of both lime AND lemon juice is the secret — lime brings the traditional Mexican citrus note while lemon adds an extra layer of brightness that makes the whole salsa pop.
