Chipotle Corn Salsa Copycat

This Chipotle corn salsa copycat is bright, smoky, and better than the original. Roasted corn, poblano pepper, red onion, cilantro, and fresh citrus juice. Ready in 10 minutes.

Ingredients
  

  • 1 medium poblano pepper diced
  • 20 oz. corn fresh, frozen, or canned — drained
  • ½ cup red onion finely diced
  • ½ jalapeño finely diced
  • ½ cup fresh cilantro chopped
  • 3 tablespoons fresh lime juice
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon salt
  • Tortilla chips to serve

Method
 

  1. Preheat oven to broil.
  2. In a mixing bowl, combine corn, poblano pepper, red onion, jalapeño, cilantro, lime juice, lemon juice, and salt. Stir to combine.
  3. Transfer to an oven safe dish.
  4. Broil for 3-5 minutes until the corn gets a little char and the peppers soften slightly.
  5. Remove from oven and serve warm or at room temperature with tortilla chips.
