Method
- Preheat oven to broil.
- In a mixing bowl, combine corn, poblano pepper, red onion, jalapeño, cilantro, lime juice, lemon juice, and salt. Stir to combine.
- Transfer to an oven safe dish.
- Broil for 3-5 minutes until the corn gets a little char and the peppers soften slightly.
- Remove from oven and serve warm or at room temperature with tortilla chips.
