Slow Cooker Glazed Carrots

Ingredients
  

  • 2 lbs prewashed baby carrots
  • ¼ cup butter melted
  • ¼ cup brown sugar
  • 1 teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg optional
  • 1 tablespoon fresh parsley chopped (for garnish)

Method
 

  1. Place the baby carrots into the slow cooker.
  2. In a small bowl, whisk together the melted butter, brown sugar, salt, cinnamon, and nutmeg (if using).
  3. Pour the mixture over the carrots and toss to coat well.
  4. Cook on LOW for 5–6 hours or HIGH for 3–4 hours, stirring occasionally, until the carrots are tender.
  5. During the last 15–20 minutes, remove the lid to help the glaze thicken.
  6. Transfer to a serving dish and garnish with fresh parsley.

Notes

Storage & Reheating

Store leftover carrots in an airtight container in the refrigerator for up to 2 days.
To reheat, warm gently in the microwave or stovetop with a splash of water or butter to refresh the glaze.
