Method
- Place the baby carrots into the slow cooker.
- In a small bowl, whisk together the melted butter, brown sugar, salt, cinnamon, and nutmeg (if using).
- Pour the mixture over the carrots and toss to coat well.
- Cook on LOW for 5–6 hours or HIGH for 3–4 hours, stirring occasionally, until the carrots are tender.
- During the last 15–20 minutes, remove the lid to help the glaze thicken.
- Transfer to a serving dish and garnish with fresh parsley.
