Orange-Glazed Salmon with Asparagus (Easy 25-Min Dinner)

Ingredients
  

  • 4 6- oz. salmon fillets preferably wild-caught Alaskan
  • 3 T. fresh orange juice
  • 2 t. honey
  • 3 T. extra virgin olive oil
  • 2 T. balsamic vinegar
  • 2 garlic cloves finely minced
  • lb. asparagus tough ends removed
  • Sea salt and black pepper to taste

Method
 

  1. Preheat oven to 400°F. Line a large rimmed baking sheet with parchment paper or Silpat.
  2. Place salmon fillets skin-side down in center of baking sheet.
  3. In a medium bowl, whisk together orange juice, honey, olive oil, balsamic vinegar, and minced garlic. Season generously with salt and pepper.
  4. Brush salmon fillets generously with the orange glaze.
  5. Add asparagus to the same bowl with remaining glaze and toss to coat. Season with additional salt and pepper.
  6. Arrange asparagus in a single layer around the salmon fillets.
  7. Bake 15-18 minutes until salmon is flaky and asparagus has slight color. Don’t overcook the salmon!
  8. Serve immediately.
