Method
- Combine marinade ingredients in a jar and shake to mix.
- Pour marinade over chicken and toss to coat. Cover and refrigerate 30–60 minutes.
- Remove from fridge 15 minutes before grilling. Drain marinade.
- Thread skewers with tomato, two pieces of chicken, tomato, two more chicken pieces, and another tomato.
- Grill skewers over medium-high heat for 4–5 minutes per side, then rotate and sear edges.
- Grill lemon halves, cut side down, for 2 minutes.
- Serve skewers hot with grilled lemon squeezed over the top.
