Lemony Grilled Greek Chicken Skewers

These lemon herb-marinated Greek chicken skewers are juicy, flavorful, and perfect for grilling season. Serve with salad, rice, or tucked into pita.

Ingredients
  

Marinade Ingredients:
  • ¼ c. extra virgin olive oil
  • 3 T. fresh lemon juice
  • 2 t. organic lemon zest
  • 1 T. fresh parsley chopped
  • 1 T. fresh oregano chopped and crushed to release oils
  • 1 sprig fresh rosemary broken into small pieces and crushed to release oils
  • 2-3 cloves garlic smashed, peeled, and roughly chopped
  • ½ t. salt
  • ½ t. black pepper
Remaining Ingredients:
  • lbs. boneless skinless chicken breast, cut into 1” cubes
  • 9 cherry or grape tomatoes
  • 6 10- inch wood or metal skewers
  • 2 large lemons cut in half

Method
 

  1. Combine marinade ingredients in a jar and shake to mix.
  2. Pour marinade over chicken and toss to coat. Cover and refrigerate 30–60 minutes.
  3. Remove from fridge 15 minutes before grilling. Drain marinade.
  4. Thread skewers with tomato, two pieces of chicken, tomato, two more chicken pieces, and another tomato.
  5. Grill skewers over medium-high heat for 4–5 minutes per side, then rotate and sear edges.
  6. Grill lemon halves, cut side down, for 2 minutes.
  7. Serve skewers hot with grilled lemon squeezed over the top.
