Easy Beef Taco Skillet (30-Minute Dinner or Appetizer)

This easy beef taco skillet is cheesy, flavorful, and ready in 30 minutes. Serve with tortillas, taco shells or chips for a quick dinner or party appetizer.

Ingredients
  

  • 1 T. extra virgin olive oil
  • ½ medium white onion diced
  • 3-4 cloves garlic minced
  • Sea salt and black pepper to taste
  • lbs. ground beef 80% lean
  • 2 T. taco seasoning
  • 1 10- oz. can fire-roasted tomatoes with green chilis drained
  • 4 oz. shredded Mexican-blend cheese + extra for serving or topping
  • 2 Tbsp Homemade Taco Seasoning or your favorite packet

Method
 

  1. In a large skillet over medium heat, heat the olive oil. Add onion and garlic, season with salt and pepper, and cook until soft and golden, about 4–5 minutes.
  2. Add ground beef to the skillet and cook, breaking it up with a spatula, until browned—about 4–5 minutes. Drain excess fat.
  3. Stir in taco seasoning and drained fire-roasted tomatoes with green chilis. Cook for 2–3 minutes, stirring frequently, until heated through and well combined.
  4. Turn off the heat, sprinkle the beef mixture with cheese, and cover for 1–2 minutes until melty.
  5. Spoon into taco shells, lettuce wraps, or over tortilla chips and top with your favorite extras.

Notes

This recipe uses 80/20 ground beef for flavor, but you can easily use your favorite blend.
