Method
- In a large skillet over medium heat, heat the olive oil. Add onion and garlic, season with salt and pepper, and cook until soft and golden, about 4–5 minutes.
- Add ground beef to the skillet and cook, breaking it up with a spatula, until browned—about 4–5 minutes. Drain excess fat.
- Stir in taco seasoning and drained fire-roasted tomatoes with green chilis. Cook for 2–3 minutes, stirring frequently, until heated through and well combined.
- Turn off the heat, sprinkle the beef mixture with cheese, and cover for 1–2 minutes until melty.
- Spoon into taco shells, lettuce wraps, or over tortilla chips and top with your favorite extras.
Notes
This recipe uses 80/20 ground beef for flavor, but you can easily use your favorite blend.
