Make the Mango Salsa
- In a glass or other non-reactive bowl, combine the diced red onion, minced garlic, diced mango, chopped red and green jalapeño peppers, fresh cilantro, and lime juice. Season generously with salt and black pepper to taste, and stir everything together until well combined. Set aside to let the flavors meld while you prepare the fish. (For best results, make this 1-2 days ahead and refrigerate—the flavors develop beautifully)
Making the Fish
- Turn on your air fryer and select the “Air Crisp” function (or regular air fry setting). Set the temperature to 400°F and adjust the timer to 6 minutes. Press “Start” to preheat the unit. This ensures even cooking and that perfect golden exterior.
- Place the cod fillets on a piece of parchment paper cut to fit your air fryer basket. Brush the fillets on all sides with olive oil, then sprinkle generously with Kinder’s Greek Blend Seasoning (or your homemade seasoning blend). Make sure both sides are well-coated for maximum flavor.
- When the air fryer beeps and signals it’s preheated (or flashes “Add Food”), carefully place the parchment paper with the seasoned fish fillets inside the basket. Add the lemon wedges alongside the fish. They’ll roast beautifully and add extra flavor. Close the lid and let it cook for the full 6 minutes.
- When the cook time is complete, carefully transfer the fish fillets to individual serving plates. The fish should be opaque, flaky, and cooked through (internal temperature of 145°F). Top each fillet generously with the spicy mango salsa. Serve immediately with micro greens or mixed greens on the side, along with the roasted lemon wedges for squeezing. Enjoy!
