Instant Pot Cilantro-Lime Rice (Like Chipotle)

Fluffy, flavorful rice with fresh lime and cilantro. Perfect side dish for Mexican food, tacos, burrito bowls, or grilled proteins.
Prep Time 5 minutes
Cook Time 15 minutes
Servings: 4
Course: Side Dish
Cuisine: Mexican

Ingredients

  • 1½ c. long-grain white rice rinsed
  • 1Âľ c. water or chicken broth
  • 1 t. salt
  • 2 limes – juice and zest
  • ½ c. fresh cilantro chopped
  • 1 t. ground cumin
  • Black pepper to taste

Equipment

  • Instant Pot min 6 qt

Method

  1. Add rinsed rice, water (or broth), and salt to Instant Pot. Stir briefly.
  2. Lock lid into place and set pressure valve to “Sealing.” Select “Manual” or “Pressure Cook” on High for 3 minutes (white rice) or 22 minutes (brown rice).
  3. When timer goes off, allow natural release for 10 minutes, then quick release any remaining pressure.
  4. Remove lid. Fluff rice with a fork. Immediately stir in lime juice, lime zest, cilantro, and cumin. Season with pepper to taste.
  5. Let sit 2-3 minutes so rice absorbs the lime, then serve.

Tips & Variations

Supper & Sage Tip: Add the lime and cilantro AFTER cooking while the rice is still hot. The heat helps the rice absorb those flavors. Adding them before pressure cooking makes the lime taste bitter and the cilantro turn brown.

Rice type timing:

  • White rice: 3 minutes high pressure
  • Brown rice: 22 minutes high pressure
  • Jasmine rice: 3 minutes high pressure
  • Basmati rice: 4 minutes high pressure

Liquid options:

  • Water = neutral flavor
  • Chicken broth = more savory
  • Vegetable broth = vegetarian option
  • Add a splash of lime juice to the cooking liquid for extra tang

Make it restaurant-style:

  • Use chicken broth instead of water
  • Add 1 tablespoon butter or oil to the rice before cooking
  • Increase lime to 3 limes for super bright flavor
  • Use more cilantro (up to 1 cup)

Frequently Asked Questions

Q: Can I use brown rice?
A: Yes! Increase pressure cooking time to 22 minutes. Everything else stays the same.

Q: My rice is mushy. What happened?
A: Too much liquid or too long cooking. For white rice, use 1:1.17 ratio (1½ cups rice to 1¾ cups liquid) and 3 minutes only.

Q: Can I make this on the stovetop?
A: Yes! Cook rice according to package directions, then stir in lime, cilantro, and cumin while hot.

Q: How do I store leftovers?
A: Refrigerate up to 5 days. Reheat with a splash of water or broth. May need extra lime juice after reheating.
